Entrepreneur Reimagines Gluten-Free Foods At The Rowayton Farmers Market

WESTPORT, Conn. — What do Stacy Orseck’s carrot apple muffins and chive dinner rolls have in common? They’re both gluten free.

Orseck, a Westport entrepreneur and owner of The Bee & The Baker, offers up an array of baked goods — made without gluten or dairy. And it’s all fresh.

“People that are gluten free … have been looking for things they can grab that taste good because a lot of what you buy in the supermarket just doesn’t taste good, there’s preservatives and fillers and things that keep it on the shelves and we don’t use any of that,” Orseck said.

So, on alternating weeks, Orseck offers her products to shoppers at the Westport Farmers Market. Orseck said her products appeal to a wide range of customers.

Vegan consumers love her macaroons, while gluten-free customers who miss bread are drawn to her chive dinner rolls. Her goal is to make food that is not only gluten-free and dairy-free but also something a “foodie” would enjoy, she said.

Orseck said she doesn’t have a formal culinary background. But she is a health coach and has a background in nutrition from classes at the Institute for Integrated Nutrition.

Orseck began her business in the spring after she began enjoying cooking with natural sugars such as honey, maple syrup and coconut sugar.

But the journey from kitchen to market didn’t come overnight. Orseck said she has worked for a long time to develop ideal recipes for gluten-free products.

“I experimented to get to these recipes for years to get them right,” she said. “And I’m experimenting all the time with new products. It takes awhile to get it perfect.”

Orseck also visits the Rowayton Farmers Market. Her booth there is next to Brown Dog Mustard, which Daily Voice previously profiled (“great stuff,” Orseck said.)

Orseck also offers her products at The Organic Market and the Double L Market Westport — and plans to offer her product in more stores in the future.
