Norwalk Chef Fires Up Grilling Tips For Memorial Day

NORWALK, Conn. -- As the summer season heats up, your grill should too. Just in time for your Memorial Day barbecue, Norwalk Chef Lauren Peden of Simply Delicious Catering offers the following grilling tips:

  • Preheat your grill for at least 15 minutes until it’s nice and hot. 
  • Clean it off with a grill brush and scraper. It’s easiest to do this when your grill is fully heated; don't bother trying to clean a cold grill – it’s twice as difficult.
  • Oil it up using vegetable oil. Drizzle oil on a towel and rub it up and down the grates to reduce the chance your food will stick to the grill.
  • Marinate your meat. Chef Peden likes to make her own house marinades to complement natural flavors of the meat. "Our favorite and simplest recipe goes perfectly with everything,'" she said "Use freshly crushed garlic with a chopped medley of herbs (parsley, basil, and cilantro) combined with olive oil, salt and pepper."
  • Let it rest when done.

Here, an easy Memorial Day recipe: 

Easy BBQ Shrimp Kabobs (Serves five)

  • Marinate 2 dozen jumbo shrimp in house marinade with the addition of fresh lemon juice
  • Soak bamboo skewers in water over night
  • Cut 1 red onion, 2 yellow and 2 green squash into 1 inch pieces
  • Skewer the shrimp, squash and onions on the skewers
  • Grill them two to three minutes on each side on medium heat. turning over just once.
  • When tails curl and turn pink they are ready!
  • Let rest on a platter for five minutes, then drizzle your favorite olive oil. Sprinkle chopped scallions and squeeze lemon wedges over the top and they are ready to go.
  • Serve over your favorite whole grain for a low carb meal.
