Chocolate Chip Cookies Save Your Snow Day

With so many days spent snowbound recently, most of us have exhausted our kid-friendly craft arsenal, our snack supply and our DVD library. And yet, Mother Nature doesn’t seem to be finished having her way with us this winter. More snow is predicted for next week. So what the heck are you supposed to do with your kids for another whole day inside? Bake cookies, of course.

I know, you already did that, like, four snow days ago. But kiddos -- especially younger ones -- never get tired of making a mess in the kitchen. And this recipe for chocolate chip cookies is as good as it gets.

So grab the supplies and dust off the hand mixer. Here’s what you’ll need:

1 cup unsalted butter, softened

1 cup white sugar

1 cup brown sugar, packed

2 eggs

2 ½ tsp vanilla extract

2 cups all purpose flour

1 cup ground oatmeal

1 tsp baking soda

2 tsp hot water

½ tsp salt

2 cups semisweet chocolate chips

Preheat oven to 350 degrees. Grind oatmeal in a food processor until it becomes a fine powder. Blend butter, white sugar and brown sugar until smooth. Beat in eggs and vanilla. Dissolve baking soda in hot water, then add to batter with salt. Stir in flour, a little at a time. Add chocolate chips. Place tablespoons of dough about 1 ½ to 2 inches apart on ungreased cookie sheets and bake for 10-11 minutes, or until edges brown.

Serve warm with a glass of milk and an encore showing of "Mary Poppins."
