NORWALK, Conn. -- Cask Republic has opened its third Connecticut location in the heart of downtown South Norwalk at 99 Washington St.
The menu, created by Culinary Director Carl Carrion, features a contemporary take on traditional, seasonal, and globally-inspired dishes that are updated and elevated to a gourmet level. The dishes change seasonally depending on the availability of fresh, local and regional ingredients.
In addition to Cask Republic’s signature dishes, the menu also will feature entrees such as the maple brined double-cut pork chop, mustard-crusted Canadian salmon, and shrimp and grits using grilled tiger shrimp, cotija cheese and an Andouille sausage vinaigrette.
Cask Republic, already known for its extensive selection of craft beer, also features eight wines, sangria, custom cocktails and cold-brewed coffee on tap.
The full-length oak bar in the main dining room is set below television screens and surrounded by booths and communal tables seating up to 100 guests. In the spring, the 60-seat outdoor patio will be available for dining.
Lunch service is offered starting at 11:45 a.m. Wednesdays through Sundays. The bar opens at 4 p.m. daily and dinner service is served daily beginning at 5 p.m. Reservations can be made by calling 203-354-0163.
