Norwalk's Forever Sweet Bakery Turns Exceptional Cakes into Dreams

NORWALK, Conn. — A daughter wanted to find a cake with an edible 1925 Mercedes-Benz for her father. A mother wanted a cake with a picture of her daughter’s horse on it. And a niece wanted a “bouquet” of mini-cupcakes to look like flowers for her aunt.

All found their edible and artistic treats at Norwalk’s Forever Sweet Bakery, which delights Fairfield County and beyond with cookies, cake pops, and, of course, cakes.

New Canaan residents Frances and Sky Mercede started the business in their home kitchen before making the move to the Stamford Town Center mall.

“We got a kiosk, and we wanted to see how everything would flow,” Sky told the Daily Voice.

And flow it did. Today, Sky and Frances continue the successful business in their own space on New Canaan Avenue in Norwalk.

The bakery, which opened three years ago, has made many special custom cakes. Customers often send them images to replicate in layers and frosting.

The bakery attracts sweet-toothed customers from all over the area. Many celebrities have ordered cakes, including singer Harry Connick Jr. and baseball great Bobby Valentine.

Sky’s favorite item is the chocolate cupcake with the vanilla icing and mini chocolate chips. He said some customers particularly enjoy the red velvet cupcakes.

The bakery also sells crispy chocolate chip cookies, which are sold in local stores, including New Canaan’s Joe’s Pizza, Norwalk’s Rowayton Pizza and Westport’s Stiles Market.

Those who do stop by or call the bakery may notice that Sky has gone the extra mile for customers, including one who couldn’t make it to the store to pick up his cake because a tree blocked his street. Sky personally drove and met him at the fallen tree.

“He comes in once a week now,” Sky said, adding that the customer usually now buys two cupcakes a week.
