NORWALK, Conn. – Norwalk’s newest bakery has a plan to ingrain itself into the local community — free cake to those doing great work in the surrounding area.

Forever Sweet Bakery is the work of local couple, Frances and Sky Mercede. Frances is the confectionery drive behind the shop. She says she's “been involved in baking all of her lie." Her parents were caterers, so “food was the family business,” she says, and she found her niche in baking.

Sky, on the other hand, was in the construction business before joining with his wife to start their business. He says he's "gone from building buildings to building cakes."

Formerly under the name “Sweet Endings,” the Mercedes have been making specialty cakes and cupcakes for years. Their options also include decorative cakes, cookies and snack-ready cake pops.

“From children’s birthdays to elegant weddings every creation gets the special attention their clients deserve,” the couple said in a press release.

At first their distribution started small — arrangements with local restaurants led to a kiosk at the Stamford Town Center. The couple finally opened a brick-and-mortar store late last year, on Main Avenue in Norwalk.

For their “Office of the Week” promotion the Mercedes are accepting nominations from customers for local offices who deserve a special treat for their hard work.

For example, Sky recently delivered the first set of cupcakes to the Norwalk Veterinary Hospital. A New Canaan resident nominated the hospital’s staff for going out of their way to comfort her when she lost her dog last month.

“Often times some of the most valuable members of our community go without ever being recognized,” Sky wrote in an e-mail. “Forever Sweet Bakery understands the importance of a strong community.”

To nominate a local business for “Office of the Week,” contact the bakery via its website.
