GREENWICH, Conn. – Vicente Siguenza is about to open his fourth restaurant in Fairfield County in 10 years, but he is striving for something unique for this new endeavor on Greenwich Avenue.
Harvest, which is scheduled to open Feb. 1, will feature American-style cuisine made from ingredients bought from local farms. It will also offer an extensive wine selection, much like Siguenza's other restaurants in New Canaan, Darien and Fairfield.
"Our concept is 'from farm to fork.' We're working with a lot of local farms to get the freshest ingredients possible," he said. "I'm hoping to be the fun and happening place in town."
Siguenza started as a busboy in Wilton 18 years ago after coming to America from Ecuador. He worked his way up and now owns Cava Wine Bar in New Canaan, 55 Wine Bar in Fairfield and Scena Wine Bar in Darien with his brother, Kleber, and his sister, Nube.
Siguenza and executive chef Eben Leonard are shaping their menu around the seasons and a unique wood-fire grill in the kitchen. But they both say using local ingredients will add another unique dimension to their restaurant.
"This will be very different from the other three restaurants. Those are more traditional," Leonard said, who worked as a chef with Siguenza at Scena. "We're trying to be as seasonal as possible. You can come in and have small plates to share or have a big dinner and not be too formal."
Leonard said he intends to change the menu often, basing dishes around fish and steak. Boards of cheeses and meats will also be on the menu to complement the wine selection.
Siguenza said he hopes to offer up to 300 wines from around the world.
With four restaurants now under his management, Siguenza can reflect back on how far he has come.
"When I worked as a busboy I hoped that one day I'd do something with my family," he said. "When we opened Cava, people said we were crazy. But it worked out, so I guess it's a dream come true – for myself, my brother and my sister."
Harvest will be located at 372 Greenwich Ave.
