REDDING, Conn. – When it came time to open Uncle Leo’s Coffee and Donuts in the Georgetown area of Redding, Norwalk resident and owner Leo Spinelli made his father hand over his secret doughnut recipe.
But for Spinelli, opening the new shop is more about sharing his family's baking with the community again. In 2009, Spinelli’s Not Just Bagels in Norwalk closed its doors after the owners retired.
Then four months ago, Spinelli said his father saw that a storefront at the corner of Main Street and Route 107 in Georgetown was available. It was an opportunity not to be missed, he said.
“He thought it would be a great coffee and doughnut shop for the area,” Spinelli said. And since then, they’ve been working to make open the new shop.
Everything they serve in the bakery is made fresh every morning, Spinelli said. All of the items come from the family recipe book.
When asked whether his father trusted him with the secret recipe for their doughnuts, Spinelli laughed and said, “He had to.”
Even as the newest addition to Georgetown, Uncle Leo’s is catching on. The shop opened Wednesday, June 4, held a grand opening ceremony Sunday during Georgetown Day, and has been doing well, Spinelli said.
“The feedback from the public has been great,” the 22-year-old owner said. Everyone who has come in says they are telling all their friends about the new shop.
Some patrons even said that now that they have had Uncle Leo’s doughnuts, they don't want any other kind.
In addition to its 10 kinds of doughnuts, Uncle Leo's offers 10 different bagels, six kinds of muffins and other assorted baked goods, which are made fresh every morning. The glazed doughnuts go the quickest, Spinelli said, with the powdered jelly doughnuts a close second.
Soon he'll be selling the Spinelli family’s Italian bread, which was loved in the Norwalk store, he said.
Spinelli and staff serves up freshly made breakfast sandwiches as well as the baked treats while patrons pour their own coffee.
Located at 19 Main St. in Georgetown, Uncle Leo’s is open from 5 a.m. to 4 p.m. Mondays through Saturdays and from 6 a.m. to 2 p.m. Sundays.
